SCNs and Associates across the congregation are invited to set aside one day the last week of March to celebrate eating a more sustainable diet.

The effects of our warming planet are increasing, and people who are poor are especially vulnerable. From flooding in Kerala, India to increased wildfires in California, the changing climate is having a devastating effect on people’s lives. As SCNs and SCNAs, what can we do to help?

According to a recent study published in the journal Science, choosing to limit meat and dairy is the single biggest way to reduce your environmental impact on the planet. As population levels rise and put pressure on food production, our planet simply cannot support our current diet.

Celebrate a Sustainable Diet!

In solidarity with those who are already feeling the effects of climate change, we invite SCNs and SCNAs across the congregation to set aside a day to celebrate eating a more sustainable diet. Choose one day during the week of March 24 – 30 to eat plant-based meals with minimal or no eggs and dairy.  Below we have provided recipe ideas and sample menus to offer inspiration. We encourage you to be adventurous and try something you’ve never tasted before!

If possible, share the experience with other sisters through a shared meal or potluck. Please take pictures of your gatherings and send them to Carolyn Cromer along with a brief description of how you lived out this challenge. We will compile your photos and post them on the SCN Nightly News. [For those of you who eat in SCN dining rooms, our community chefs are on board and will provide you with tasty plant-based options.]

Thank you for helping to model the change that is needed to care for Earth and the world’s vulnerable. We hope you have fun with this challenge!
